Roasted Garlic Pork Loin

​Ingredients
  • 3 pound pork loin
  • 4 or 5 garlic cloves, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cracked pepper
  • 1/2 teaspoon paprika

​Instructions
  1. Preheat  oven to 375°F 
  2. Add the pork loin to baking pan with the fat cap side up. To help the seasonings adhere better score the top with a sharp knife in an x pattern. Just deep enough to create grooves the seasonings can sit in. 
  3. In a small bowl mix salt, pepper, paprika and minced garlic. Rub the mixture on all sides of the pork. 
  4. Cook the pork  for 20 - 75 minutes covered or until the internal temperature reaches 147- 155°F 
  5. Remove from oven and let rest 5 minutes before serving.
*You can also add carrots, potatoes, sliced onions, sliced garlic, a bit of butter and  some water or broth under the pork roast for a full flavourful meal in one.
