Roasted Garlic Pork Loin
Ingredients
- 3 pound pork loin
- 4 or 5 garlic cloves, minced
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground cracked pepper
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 375°F
- Add the pork loin to baking pan with the fat cap side up. To help the seasonings adhere better score the top with a sharp knife in an x pattern. Just deep enough to create grooves the seasonings can sit in.
- In a small bowl mix salt, pepper, paprika and minced garlic. Rub the mixture on all sides of the pork.
- Cook the pork for 20 - 75 minutes covered or until the internal temperature reaches 147- 155°F
- Remove from oven and let rest 5 minutes before serving.
*You can also add carrots, potatoes, sliced onions, sliced garlic, a bit of butter and some water or broth under the pork roast for a full flavourful meal in one.
